The Coppiette PUGLIESI of "CORNACCHIA SALUMI" are obtained from the loin and fillet of heavy pigs coming exclusively from national farms, very lean cuts. The meat is hand cut and frayed by skilled master butchers. The thin strips obtained remain in a tanning of Mediterranean spices and aromatic herbs for at least 48 hours. In this way the meat is flavored throughout its thickness. Then, at a constant and controlled temperature, slow ventilated drying is carried out.
